Ingredients

For the chicken:

  • 600g Bostock Brothers organic chicken breast
  • 3 tbsp flour
  • 5 tsp salt
  • 1 tsp gr black pepper
  • 1 tsp oregano
  • 1 tsp thyme
  • 1 tsp paprika
  • 1/2 tsp garlic powder
     

For the sauce:

  • Oil
  • 1 onion, sliced
  • 2 garlic cloves, minced
  • 1 cup cherry tomatoes
  • 1 red bell pepper, sliced
  • 1 tsp dried oregano
  • 1 tsp paprika
  • 1 tbsp tomato paste
  • 1/3 c white wine
  • 1 c water w/ chicken buillon
  • 1 c all purpose cream
  • 1/2 c parmesan cheese
  • 3 cups baby spinach
  • Salt and pepper to taste

 

 

Procedure

1. Coat chicken in flour, salt, pepper and spices.
2. Heat oil in a skillet over medium heat. Fry chicken until golden and crispy. Set aside.
3. In the same skillet, add onion, garlic, cherry tomatoes and spices. Cook for 1-2 minutes, then add bell pepper, tomato paste, white wine, water and cream. Mix in cheese and baby spinach.
4. Add chicken back into skillet and let cook. Remove from heat and serve!
