- Dry both sides of the scallops with paper towels.
- In a pan, heat olive oil on medium heat. Lay scallops on pan and season with salt and pepper.
- Cook for 2-3 minutes on each side until golden. Remove scallops.
- Melt butter in the pan and add minced garlic. Cook for 30 seconds.
- Add lemon juice and water. Simmer for 2 minutes.
- Add parsley, and season with salt and pepper to taste.
- Add the scallops back into the pan and spoon the sauce on top. Garnish with more parsley and serve.
