Ingredients
  • 2 lbs organic chicken 
  • 6 tablespoons low sodium soy sauce or coconut aminos
  • 6 tablespoons apple cider vinegar
  • 3 pieces bay leaves
  • 5 cloves garlic crushed
  • 1 teaspoon whole peppercorn
  • 1 1/2 cups water
  • 3 tablespoons canola oil
  • 1 teaspoon sugar (optional)

 

 

Procedure
  1. Season chicken cuts with soy sauce (or coconut aminos), vinegar, bay leaves, peppercorn and garlic for at least 20-30 minutes.
  2. Heat cooking pot and add oil
  3. Pan-fry marinated chicken (set aside marinade for later), about 2 minutes per side.
  4. Add remaining marinade and water, and let simmer until tender (about 30 minutes)
  5. Serve with or without sauce left in the pot. Enjoy!
