Ingredients

For the pork chops:

  • 3 pcs Healthy Options Organic Pork Chops
  • 1 tsp Field Day Organic Sea Salt
  • 1 tsp Morton & Basset Black Pepper
  • 1 tsp Pereg Paprika
  • 1 tsp Simply Organic Ground Coriander
  • 1 tsp Simply Organic Thyme
  • 6 Tbsp Cadia Extra Virgin Olive Oil
  • 5 cloves Garlic, slivered
  • 3 tsp Lakewood Lemon Juice

For the freekeh:

  • 1 cup Bob’s Red Mill Freekeh
  • 2 ½ cups Field Day Organic Vegetable Stock
  • 1 Tbsp White Onion, diced
  • 1 Tbsp Zucchini, diced
  • 1 pcs Tomatoes, seeded and diced
  • 1 bunch parsley
  • Sea Salt and Pepper to Taste

For the freekeh:

  • 1 cup Bob’s Red Mill Freekeh
Procedure
  1. Season pork chops with salt, black pepper, paprika and coriander.
  2. Marinate with garlic, thyme, lemon juice and 3 Tbsp olive oil for 30 minutes.
  3. Grill over medium high heat
  4. Cook freekeh according to package instructions, replacing water with vegetable stock. Season with salt and pepper.
  5. In a skillet, sauté onion, zucchini, and tomato in 3 Tbsp olive oil for 2 minutes then fold into cooked freekeh. Drizzle with olive oil and top with parsley.
  6. Plate up freekeh and place pork chops on top. Serve with apple sauce on the side.
