Ingredients
• 2 cups beef stock or bone broth
• 1.5 tbsp gelatin powder
• 2 egg yolks
• 4 tbsp butter
Procedure
1. Place the stock and gelatin into a saucepan, and simmer for 8 to 10 minutes.
2. Remove the stock from the heat for 2 minutes, and add the egg yolk, stirring hard and quickly.
3. Place the stock back on a low heat and add the butter. Stir well.
