What is gluten?

According to the BBC Good Food, gluten is a protein component found in wheat. It gives elasticity, strength and the ability to ‘hold’ food products together. Buckwheat is a good source of magnesium, zinc, phosphorus and B vitamins. This pasta offers 4 to 6 grams fiber and 6 to 9 grams protein per serving.

  • Quinoa

It’s an excellent alternative to couscous, a good source of the minerals, manganese and phosphorus as well as protein and oleic acid (a heart healthy fat). Ideal for salad combined with shredded chicken, pumpkin seeds, mixed herbs, chopped dates (or alternative) and olive oil.

  • Courgette

Very quick and easy to make, courgette, or zucchini, along with other vegetables can be used to make noodles either by placing them through a spiralizer, for spaghetti type noodles, or even utilizing a peeler for paperdelle style noodles.
